How do I get my iPod touch screen that appears on a Mac?

I'm running OS X 10.4.11 and an iPod Touch. I would be able to see what is running on my iPod Touch using the screen of my Mac, just as occurred in major speeches by Apple (When the applications were games and demos). How I? Is there a software or an AppleScript that can be downloaded?
