If I can unlock my iPhone jailbroken U.S., I can change the SIM card to a SIM card from Vodafone in Europe?

The current firmware What I have is 3.1.2. Also, I have itunes 9.0.2 (not the latest version of iTunes). I travel to Greece and would like to take my iphone, and just replace the SIM card with a pay as you go SIM card from Vodafone.
