What does jailbreaking?

Jailbreaking not has nothing to do with prisons, at least not in jailbreaking.com. It is a term that relates to the process that allows users to iPhone and iPod touch running any code in devices other than those originally created by Apple. In other words, is actually a process of Hacking Apple devices, and some prefer to call it a liberation process.
